Born From a Shared Dream

Two friends. Two kitchens. One restaurant that honours both.

"These are not restaurant recipes.
They are heirloom recipes
passed down by memory,
refined with respect."

Our Story

How Amber Leaf Came to Hackney

Amber Leaf was born from a shared dream between two friends — one from the Himalayan valleys of Himachal Pradesh, the other from the rich plains of Punjab. Raised in homes where food was sacred and grandmothers ruled the kitchen, they grew up understanding that true flavour cannot be rushed.

In Himachal, meals simmer slowly against the mountain cold, fragrant with cardamom and the patience of generations. In Punjab, abundance fills the table and butter finishes the dish — cooking that is generous, bold and deeply rooted in community.

When the two friends found each other in London, they recognised something rare: a shared language of food, family and home. What started as late-night conversations over shared memories became the blueprint for a restaurant.

They chose Hackney Road — a stretch of East London that has always welcomed those who bring something real and unapologetic. In 2024, Amber Leaf opened its doors.

The Two Kitchens

Where Every Dish Begins

Every recipe on our menu traces its roots to one of two places. Here's what each one means to us.

Northern India
Himachal Pradesh

Tucked into the Himalayan foothills, Himachali cooking is defined by slowness. Thick gravies built over hours, dried fruits folded into savoury dishes, and the warmth of cardamom and clove against mountain cold. The Himalayan Ladakh Momo carries this spirit directly — handmade dumplings, rustic and nourishing, just as they were served across the valley.

Our kitchen honours this by never rushing. The slow-roast. The dum seal. The resting time. These are not shortcuts you can take when the recipe belongs to a grandmother.

Northern India
Punjab

Punjab is a cuisine of abundance. Buttery dals, tandoor-charred breads, gravies finished with cream, and meat cooked on the bone until it yields. There is no modesty on a Punjabi table — only warmth, and the implicit message that there is always more.

Our Butter Chicken is our most loved tribute to this tradition — the tomato, cashew and fenugreek gravy inspired by the kitchens of Old Delhi. The Dal Makhni is simmered overnight, exactly as it was at home. No shortcuts. No compromise.

Our Philosophy

What We Believe In

Patience is the Ingredient

The most important element in our recipes isn't spice — it's time. Slow-roasted meats. Overnight lentils. Dum-sealed biryanis. We refuse to rush the dishes that deserve patience.

🌱
Quality Without Compromise

Free-range chicken. Fresh fish. Hand-ground spices. We source the best we can find and let the quality speak for itself. Our customers can taste the difference, even if they don't know why.

🏠
Hospitality Is Personal

We are a new restaurant, and every guest who walks through the door is helping us build something. We take that seriously. Come as a guest, leave as a regular.

In the Community

Part of Hackney

Hackney Road has always been a place where communities meet, where independent restaurants thrive, and where something genuine is always welcome. We chose this street intentionally.

We are a new restaurant. We opened our doors knowing that every guest who tried us was taking a small leap of faith — and we have tried to reward that faith with food and hospitality that earns their loyalty.

We are grateful to be part of this neighbourhood, and we take our responsibility to it seriously. Every review, every referral, every birthday booked with us helps us grow into the restaurant this community deserves.
